Caprese Salad

Local cheese maker Dayspring Dairy is now selling its cheese at the Pepper Place Farmers Market, they have  a few different kinds of cheese; however, for a variation, instead of using fresh mozzarella we will be using their Farmhouse sheep feta. Caprese salad is an easy dish to make. It is light and refreshing and is served as an antipasto, and as any chef will tell you, the simpler the dish, the fresher the ingredients need to be.

Ingredients:

5-6 roma Tomatos

1 block of Fresh Farmhouse Sheep’s feta, or traditionally fresh mozzarella

Virgin Olive oil

Balsamic vinaigrette

Fresh basil leaves

Sea salt

Fresh ground pepper

A baguette

 

Begin by layering with alternating slices of tomatoes and feta, adding a basil leaf between each.   Drizzle the salad with extra virgin olive oil and balsamic vinaigrette.  Then salt and pepper to taste.  A little baguette is great to sop up some of the extra olive oil and balsamic vinaigrette.  All that is left is to enjoy this great tasting dish.
