Farm Fresh Egg and Goat Cheese Frittata

Ingredients:

asparagus tips (half a bunch)

8 Stone Hollow Farm eggs, whisked

6 ounces of Stone Hollow Farm goat cheese

2 chorizo links, cut into small pieces

6 green onions, chopped

10 small cherry tomatoes, halved

5-6 broccoli florets, broken apart

 

Directions:

Brown chorizo in a pan and drain. Preheat broiler. Spray medium oven-proof skillet with cooking spray and heat over medium heat. Add asparagus, broccoli, green onions, cherry tomatoes, and chorizo; cook, stirring, for three minutes, until broccoli is tender. Add eggs and goat cheese on top. Reduce heat to low, and cook until frittata is almost set. Place skillet under broiler for two minutes or until the top is set and just lightly golden.
