Spaghetti and Meatballs

Serves: 4

1 ¼ lb. ground sirloin

½ cup breadcrumbs

1 egg

¼ cup grated parmesan cheese

2 cloves garlic, finely chopped

¾ tsp. salt

¾ tsp. freshly ground black pepper

¼ cup chopped fresh herbs (such as basil, parsley, and oregano)

1 lb. spaghetti pasta

4 cups marinara sauce

  1. Heat oven to 425F.
  2. Combine beef, breadcrumbs, egg, cheese, garlic, salt, pepper, and herbs in a bowl, mixing well. Shape mixture into 2 inch balls and place on lightly greased baking sheet. Bake 15 minutes or until no longer pink in center.
  3. Meanwhile, bring a large pot of salted water to a boil. Add pasta and cook according to package directions for al dente. Drain pasta and return to pot. Add half of marinara to pasta, tossing to coat. Add remaining half of marinara to meatballs, tossing to coat. Serve spaghetti topped with meatballs. Sprinkle with extra cheese or herbs, if desired.

Pea Soup

Serves: 6

2 tablespoons butter

1 medium onion, chopped

2 cloves garlic, chopped

1 teaspoon salt

½ teaspoon freshly ground black pepper

2 cups vegetable broth, chicken broth, or water

2 (16 oz) bags frozen peas

1 tablespoon fresh lemon juice

  1. Heat butter in a Dutch oven or large saucepan over medium high. Add onion; sauté 3 min or until translucent. Add garlic; sauté 30 seconds. Add salt, pepper, broth or water, and peas. Bring to a simmer; reduce heat to medium low and simmer 5 min. Remove from heat; stir in lemon juice.
  2. Puree the soup, in batches, using a blender (use caution if soup is still hot). Serve warm or chill and serve cold.

Vanilla Milkshake

Serves: 2

1 pint vanilla ice cream, softened

⅓ cup whole milk or half and half

½ teaspoon vanilla extract

Pinch sea salt

  1. Process all ingredients in a blender until foamy and thick, about 3 minutes. Add additional milk if the shake is too thick. Serve immediately.
