Table Talk: Salud

Authentic Mexican Downtown

Salud Taqueria is Jesús Méndez’ heartfelt ode to his parents, Jesús Méndez Sr. and Christina Tellez, who are involved in day-to-day restaurant activities as advisors over food production. Telling their story through authentic Mexican food, tradition, and hospitality in a taqueria setting, Jesús opened Salud alongside his business partner and the concept’s beverage director, José Medina Camacho.

The fast-casual menu is centered around the recipes that Jesús grew up eating at his parents’ table as well as Christina’s experience working at taquerias in Puebla before coming to the United States. Tacos are served on handmade tortillas with the option of four proteins and one vegetarian selection—carne asada (using traditional cuts like diezmillo de res), pollo asado, suadero, trompos-style al pastor, and nopal—all complemented by house-made salsas verde and borracha. José’s beverage program features rotating house cocktails, a margarita al pastor, frozen sangria, Michelada service, Mexican beers, natural and low-intervention wines, and more. A sizable bar and flexible seating make up the dining room of Salud, and passersby are immersed in the tortilla-making process through a floor-to-ceiling window into the kitchen.
